Um cupcake bem português // A true portuguese cupcake.







































































































Uma das componentes do desafio "Entra Talento", do restaurante Entra, é criar uma entrada ou uma sobremesa e cozinhá-la lá, fazendo parte do menu dessa noite.

Depois de recebido o simpático convite e acertada a data, comecei a imaginar o que poderia apresentar, sendo que a única regra era ser algo de inspiração tradicional portuguesa.

Depois de equacionadas e testadas algumas entradas e sobremesas (nesses dias, os livros "Cozinha Tradicional Portuguesa", de Maria de Lurdes Modesto e "Doçaria dos Conventos de Portugal", de Alfredo Saramago, foram as minhas leituras de cabeceira), o escolhido foi este "cupcake conventual", ou "cupcake de comer à colher", como também gosto de lhe chamar.

Chila, amêndoa, doce de ovos e, no topo, uma nuvem fofa de merengue...
Que melhor combinação de ingredientes poderia levar a um restaurante que fica na Rua do Açúcar?!

No dia, o merengue 'suiço', feito com calda de açúcar, pregou-nos uma partida e não conseguimos usar o bico pasteleiro, talvez devido à quantidade reduzida de açúcar (os queques já são uma pequena bomba e gosto do merengue pouco doce para contrastar).
Ficaram por isso com um aspecto mais rústico, com o merengue moldado à colher.
Mas não se assustem com isto do merengue suiço e façam o merengue tradicional, com o açúcar adicionado aos poucos quando as claras já estão a ganhar forma (que é o também chamado merengue 'francês'.
Aliás, o merengue do cupcake que vêem nas fotos com o fundo rosa é este tipo de merengue mais simples.

E queimado com o maçarico, fica um queque todo vaidoso!

One of the components of "Entra Talento" challenge, is to create a starter or a dessert and cook it in the restaurant, as part of that night menu.

After receiving the cool invitation and arranging the date, I began to wonder what could I cook. The only rule was to be something inspired in Portuguese traditional cuisine.

After have tested a few starters and desserts (these days, the books "Cozinha Tradicional Portuguesa" by Maria de Lourdes Modesto, and "Doçaria dos Conventos de Portugal", by Alfredo Saramago, were my bedside reading), the chosen one was this "conventual cupcake" (because it's inspired in old portuguese monastery recipes) or "cupcake to eat with a spoon"as I also like to call it.

What better combination of ingredients could I take to a restaurant that sits in Rua do Açúcar (Sugar street)?!

On that day,  the "Swiss meringue", made with sugar syrup, pranked us and we could not use the pastry tip, perhaps due to the reduced amount of sugar (the cupcakes are already a small bomb and I like the meringue not too sugary).
So they looked much more rustic, with the meringue molded with a spoon.
But do not be scary by this Swiss meringue and make the traditional merengue with sugar added gradually when the whites are already taking shape (which is also called 'French meringue'. By the way, the meringue in the cupcake you see in the pink background photos has this type of simpler meringue.

Finalize them with the blowtorch and you'll get a very fancy cupcake!






























Cupcakes conventuais

Para cerca de 12 queques médios

Para o doce de ovos do recheio:

12 gemas + 1 ovo inteiro
500 g de açúcar
250 ml de água
1 pau de canela
1 pedaço de casca de limão 

Num tacho, levar ao lume a água, o açúcar, o pau de canela e a casca de limão.
Mexer SÓ no início para envolver bem o açúcar na água e deixar ao lume em lume médio SEM mexer. Entretanto, desfazer com um garfo as gemas e o ovo numa taça de metal ou vidro. Quando a calda de açúcar começar a ferver bem, bolhas grandes por toda superfície da calda, CONTAR 3 MINUTOS.
Retirar do lume, descartar o pau de canela e a casca de limão e juntar em fio às gemas+ovo, lentamente e mexendo sempre. COAR esta mistura para o tacho e levar de novo ao lume até engrossar, sem deixar ferver (cerca de 15 minutos).
Verter para um frasco de vidro, deixar arrefecer um pouco, fechar bem e guardar no frigorífico. O que sobrar, usar em mais fornadas ou noutras sobremesas, como por exemplo natas do céu.

Para os queques:

120 g de miolo de amêndoa ralado (preferencialmente com pele)
120 g de doce de chila
110 g de açúcar
2 ovos (L de preferência)
2 gemas (L de preferência)
12 forminhas de papel médias + tabuleiro ou 12 formas de queques

Pré-aquecer o forno nos 180º.
Colocar as forminhas de papel no tabuleiro metálico de queques.
Com um batedor de varas, bater os ovos com as gemas e o açúcar até se obter uma mistura fofa.
Juntar a amêndoa, misturar bem e adicionar o doce de chila, envolvendo bem os fios de chila por toda a massa.
Encher até 2/3 das formas com o preparado e levar ao forno cerca de 25 minutos.
Testar com um palito, que deve sair praticamente seco.
Retirar do forno e retirar os queques das formas de metal. Deixar arrefecer, preferencialmente sobre uma grade.
Quando bem arrefecidos e com uma faca bem afiada e pontiaguda, retirar um pedaço do centro do queque, criando a cavidade que vai ser recheada: com a ajuda de uma colher de sobremesa, encher com doce de ovos. Tapar com a massa que se retirou.

Para o merengue
(se for para usar bico pasteleiro, contar com cerca de 2 claras por queque e 1 colher de chá de açúcar por cada clara)

Bater as claras em castelo firme - a meio do processo começar a adicionar o açúcar e juntar também uma pitada de sal.
Colocar o merengue num saco pasteleiro munido de bico frisado e cobrir os queques.
Usar um maçarico para “queimar” o merengue.
Servir com uma colher de sobremesa.

Conventual Cupcakes

About 12 medium-size cupcakes

For the egg curd:

12 egg yolks + 1 whole egg
500 g sugar
250 ml water
1 cinnamon stick
1 piece of lemon peel

In a saucepan, bring to boil the water, sugar, cinnamon stick and lemon peel.
Stir ONLY at the beginning to involve the sugar in the water and leave to boil over medium heat WITHOUT stirring.
Meanwhile, put the yolks and the egg in a metallic or glass bowl and lightly mix them with a fork.
When the sugar syrup starts to boil, with big bubbles all over the surface, COUNT 3 MINUTES.
Remove from the heat, discard the cinnamon stick and lemon peel and add, in a slow trickle, to the egg mixture, stirring constantly.
Strain this mixture to the saucepan and cook again until thickened, stirring constantly and avoiding the boiling point (about 15 minutes).
Use after cooling or store in glass jars, tightly closed. Can be kept for several weeks in the fridge. Use the leftovers in more of these cupcakes batches or other desserts as "Natas do Céu".


For the cupcakes:

120 g grated almonds (preferably with skin)
120 g fig-leaf gourd jam

110 g sugar

2 eggs (preferably Large)

2 egg yolks (preferably Large)

12 medium muffin paper cases + metallic muffin moulds

Preheat the oven to 180 º C.
Place cupcake papers in the metal muffins mould.
Beat eggs, yolks and sugar until you get a fluffy mixture.
Add almonds, mix well and add the fig-leaf gourd jam, involving well throughout the batter.
Fill 2/3 of the paper cases and bake about 25 minutes.
Test with a skewer, which should come out almost dry.
Remove from the oven and remove the cupcakes from the metallic mould.
Allow to cool, preferably over a rack.
With a sharp and pointed knife, remove a little piece from the center of the cupcake, creating a cavity: with the help of a dessert spoon, fill with egg curd and cover again with the removed bit of cupcake.

For the meringue:
(If using a pastry tip, count on about 2 egg whites per cupcake and 1 teaspoon of sugar per white)

Whisk the egg whites till firm - at the middle of the process start adding sugar and add also a pinch of salt. Transfere the meringue to a pastry bag fitted with a star pastry tip and cover the cupcakes.
Use a blowtorch to "burn" the meringue.
Serve with a dessert spoon.
