Um brownie diferente. // A special brownie.






















































Apesar de já o ter levado para piqueniques, acho o brownie um bolo mais próprio para o Inverno. Ou para o Outono, vá.
Mas desde que vi esta sugestão na edição de Setembro da revista 'Good to know - Recipes', foi directa para o topo da lista de receitas a experimentar.
E a verdade é que, com um marido viciado em chocolate não posso estar muito tempo sem levar nada achocolatado ao forno. Mesmo que esteja calor e no dia anterior tenha havido um almoço que durou três horas (dizem que o marisco não enche).

Este bolo foi então a sobremesa do nosso almoço de domingo, feito e comido na casa de campo dos meus sogros, numa aldeia de Lousada onde passamos sempre parte das férias e alguns fins-de-semana ao longo do ano (onde os rapazes se descalçam à sexta, mal chegam, e praticamente só se voltam a calçar no domingo, antes de entrarem no carro. E só isso, já é delicioso!).

Não segui a receita do brownie da revista - era (ainda) mais calórica e um pouco mais trabalhosa, pois exigia bater as claras em castelo - e usei antes a minha receita de brownie preferida, que é uma adaptação (e simplificação) de um brownie do chef Henrique Sá Pessoa. Segui a receita inglesa para o merengue e para o formato da forma, mas julgo que se fizesse o brownie tradicional - rectangular - também teria resultado.

Da próxima vez tenho de acertar melhor os tempos da dupla cozedura, pois nesta primeira experiência a massa do bolo acabou por cozer um pouco mais do que devia.
Em todo o caso, ficou bom e bonito, com a textura extra do merengue a tornar ainda mais guloso um bolo que por si só já costuma soltar elogios.

Achei genial esta ideia de juntar merengue a um bolo mais convencional, sem ser uma tarte (ou um pastel tipo jesuíta), e até já estou a pensar noutras combinações!

Although it has already been taken to picnics by me, I think brownie is a more winter and autumn cake.
Anyway, since I saw this suggestion in the September issue of  'Good to know - Recipes' magazine, it went straight to the top of the 'to bake list'.
And the truth is: with a husband addicted to chocolate I can't stay without baking anything with chocolate for long periods. Even when is very hot outside and the previous day we had a 3-hour summer lunch (people say that seafood is light).

So, this cake was our dessert last Sunday, baked and eaten at the cottage of my in-laws, in Lousada countryside, where we always spent part of the holidays and some weekends throughout the year (where the boys took off their shoes on friday, soon as we arrive, and put them on again on Sunday afternoon, just before entering the car).

I didn't followed the magazine's brownie recipe - it has (even) more calories and requires a little more effort, as we need to beat the egg whites.  I used my favorite brownie recipe, which is an adaptation (and simplification) of a brownie recipe from chef Henrique Sá Pessoa. I did followed the english recipe for the meringue and the cake format, but I think if I'd done the rectangular traditional brownie, it would be ok.

Next time I have to refine the 'double' baking time, since in this first experience the cake batter turned out a little bit overbaked.
In any case, it was very good and beautiful, with the extra texture of the meringue making the cake 'yummier'.

This idea of joining the meringue to a more conventional cake is great, so I'm already thinking of other possible combinations ...


Brownie merengado

Para o brownie:
200 g de chocolate de culinária
250 g de manteiga 
350 g de açúcar amarelo
4 ovos
100 g de farinha sem fermento
2 colheres de chá de fermento em pó


Para o merengue:
(Good to know Recipes - September 2013)

4 claras 
150 g de açúcar amarelo
50 g de cacau em pó
1 colher de chá de farinha de milho
1 colher de café de essência de baunilha (não usei)


Pré-aquecer o forno nos 180º.
Untar uma forma redonda de fundo amovível grande (25-26 cm de diâmetro), forrar o fundo com papel vegetal, untar o papel e laterais e polvilhar com farinha.
Derreter o chocolate com a manteiga, no micro-ondas por exemplo, e mexer bem até obter um creme liso e brilhante.
Bater bem os ovos com o açúcar.
Juntar a mistura de chocolate à mistura dos ovos.
Envolver a farinha e o fermento. Verter na forma e levar a cozer cerca de 15 minutos (eu levei cerca de 25 e, como depois de levar o merengue volta ao forno cerca de 20 minutos, achei que foi demasiado).

Entretanto, preparar o merengue: bater as claras em castelo, adicionando o açúcar aos poucos, até obter picos relativamente firmes e brilhantes. Envolver o cacau e a farinha de milho peneirados.
Retirar o bolo do forno e espalhar por cima o merengue, com ajuda de uma espátula ou colher grande.
Levar de novo ao forno por mais 20 ou 25 minutos ou até o merengue ter ganho uma crosta firme.
Servir morno ou à temperatura ambiente, preferencialmente acompanhado de uma bolo de gelado de nata ou baunilha.

Chocolate Meringue Brownie


For the brownie:
200 g dark chocolate
250 g butter
350 g of brown sugar
4 eggs
100 g plain flour
2 teaspoons baking powder

For the meringue:
(Good to know Recipes - September 2013)

4 egg whites
150 g of brown sugar
50g cocoa powder
1 teaspoon of corn flour
1 teaspoon vanilla extract (didn't use)


Preheat the oven to 180Cº.
Grease a 25-26 cm diameter springform cake tin and line with baking paper, grease the paper and sides of the cake tin and sprinkle with flour.
Melt the chocolate with the butter, in the microwave for example, and stir well until mixture is smooth and shiny.
Beat the eggs with the sugar.
Add chocolate mixture to the egg mixture.
Fold the flour and the baking powder. Spoon the mixture into the prepared tin and bake in the oven for 15 minutes, approx. (I've baked mine for 25 minutes and I think it was too much).

Meanwhile, make the meringue: whisk the egg whites to stiff peaks adding the sugar a little at a time. Sift the cocoa and corn flour together, then fold into the meringue. until the mixture is even and glossy.  
Remove the brownie from the oven and cover the top with the meringue, with a spatula or large spoon.
Return to the oven for a further 20-25 minutes or until the meringue puffs up and a crust forms but the centre is still soft.
Serve warm or at room temperature, with vanilla ice cream.
