Summer birthday party.


























































Ao contrário de mim e dos meus rapazes pequenos, os meus sobrinhos fazem anos na Primavera e no Verão.
Se dantes achava que fazer anos em tempo de férias era uma seca, porque nunca se estava nesse dia com a turma e com os amigos da escola, agora acho esses aniversariantes uns privilegiados.
Os dias de sol deixam toda a gente mais descontraída, as festas podem ser ao ar livre e terminar mais tarde, e os gelados - ainda que possam estar presentes à mesa durante todo o ano - sabem melhor do que nunca por estes dias.

Estas fotos mostram a mesa de gelados que preparei para o almoço de aniversário da minha sobrinha I. Apesar de já não ser uma criança, a I. adora estes mimos e até me ajudou na decoração: os pompons de papel, por exemplo, foram feitos por ela e pela irmã.
Aliás, toda a decoração é DIY: comprei as cartolinas às bolinhas, que usei para fazer as bandeirinhas, as bases das caixas e as etiquetas, feitas no computador e impressas em casa.
Com alguns dias de antecedência, pintei com spray umas caixas pequenas de madeira que andei a recolher pelas frutarias, fiz o topping de chocolate e os gelados - os sabores eram Leite condensado e bolacha, Morango e Framboesa, Nectarina, e Tiramisù  - e fui aqui abastecer-me de coisas boas como os cones, as taças de bolacha e as pintarolas.
A loiça e os frascos já os tinha e têm sido usados nas mesas que vou decorando, e alguns detalhes como as tacinhas de papel e as palhinhas às pintinhas, comprei-as aqui, de onde vieram também os dispensadores de sumo (nas fotos aparece o da groselha, mas na festa havia outro com limonada).

E assim, sem muito trabalho, se fez uma 'banquinha de gelados' que deliciou miúdos e graúdos.
Os meus piratas, então, não cabiam em si de contentes por poderem ser os 'donos da gelataria' e servir os 'clientes'.

E como não há festa sem bolo, para cantar os parabéns à I. havia um delicioso bolo de coco com chocolate branco e framboesa: uma receita que resultou muito bem à primeira, mas que me pregou uma partida da segunda vez que o fiz. Saibam tudo na receita, um pouco mais abaixo!

Unlike me and my lads, my nephews were born in spring andsummer.
Until sometime ago, I thought that having birthday duringholidays was boring, because one would never be in class, with school friends thatday. But now I think these are very privileged people.

The sunny days leave everyone more relaxed. The parties canbe outdoors and finish late in the evening. Ice creams - although we can eatthem throughout the year –  tastebetter than ever these days.
These photos show the ‘ice cream table’ I’ve prepared forthe birthday party of my niece I. a 19 year old that still loves thesetreats and even helped me with the decoration: the tissue pompoms, for example,were made by herself and her sister.

All the decor was DIY. With some days in advance, I bought the papers and made the buntings and the labels that I designed on the computer and printed at home. I’ve also painted small wooden fruitboxes that have been collecting around the nearby greengrocers, made the icecreams - the flavors were Condensed milk and cookies, Strawberry and Raspberry,Nectarine, and Tiramisu - and went here to buy good and cool things such ascones, biscuit cups and smarties.
The jars and the tableware are from my personal collection andhave been used in the tables I’ve been decorating. Some details such as thepolka dots paper bowls and paper straws, were bought here, the store where Ialso bought the juice dispensers (you can see in the photos the one with blackcurrantjuice, but there was another with lemonade).
And so, without much work, we had a sweet ‘ice cream parlor'that delighted children and adults alike.

My pirates were very happy because their cousin let them be the'owners’ of  the ice cream shop andserve all the ‘customers’.
And as there is no birthday party without a cake we had a delicious white chocolate and raspberries filling coconutcake: a recipe that worked very well that day, but which revealed itself to bea tricky one later that week.

Bolo de de coco, chocolate branco e framboesas
[SaveursMagazine – Spécial Desserts ]

Este bolo deve ser feito de véspera, à excepção dacobertura.

Para amassa:
5 ovos
155 g de açúcar
125 g de farinha
30 g de farinha de amêndoa (ou miolo de amêndoa ralado)

Para acalda de açúcar:
150 ml de água
90 g de açúcar

Para orecheio de coco, chocolate branco e framboesa:
250 g de chocolate branco
4 g de gelatina (3 folhas)
125 g de leite
250 ml de natas para bater
80-100 g de coco ralado
400 g de framboesas frescas (aprox.)

Para acobertura:
200 ml de natas para bater
100 de queijo mascarpone*
30 g de açúcar*
Coco ralado

*Usei 200 g de mascarpone e 60 g de açúcar e ficou muito bom.

Peneirar as farinhas e reservar.
Partir os ovos parauma taça metálica ou de vidro, juntar o açúcar e levar ao lume em banho-maria (a água não deve tocar no recipiente dos ovos),mexendo sempre com um batedor de varas até triplicar de volume. Retirar econtinuar a bater até arrefecer bem.
Entretanto pré-aqueça o forno nos 180º.
Incorpore delicadamente as farinhas, com uma espátula, na mistura dos ovos.Verta para 1 forma de 20 cm untada e enfarinhada (eu verti 1/3 para uma forma e2/3 para outra, ambas de 20 cm, e levei a cozer ao mesmo tempo: assim só tivede partir um dos bolos ao meio uma vez).
Deixe cozer cerca de 25/30 minutos.Retire do forno e desenforme sobre papel vegetal.
Para a calda, leve a água com o açúcar ao lume eassim que o açúcar estiver dissolvido e comece a ferver, conte dois minutos.Reserve.
Para a mousse do recheio, colocar as folhas degelatina em água fria. Levar o leite ao lume e, quando ferver, juntar as folhasde gelatina escorridas, mexer e dissolver bem, vertendo de seguida sobre ochocolate branco partido em pedaços numa taça. Mexer até ficar um creme liso edeixar arrefecer. Bater as natas em chantilly e juntar ao creme com a ajuda deuma espátula. Juntar por fim o coco ralado. Leve ao frigorífico antes derechear, para que ganhe consistência. Entretanto lave e seque as framboesas.
Quando os bolos estiverem bem frios, corte-os em três(ou um deles em dois se tiver feito como eu). Coloque um disco de bolo no pratode servir, regue com a calda de açúcar e barre com a mousse de coco e chocolatebranco. Introduza neste creme metade das framboesas. Tape com outro disco debolo e regue toda a superfície deste com a calda. Volte a colocar uma camada derecheio e introduza a outra metade de framboesas. Coloque em cima a últimacamada de bolo, que deve regar com a restante calda. Se um pouco de mousse sairpara os lados, barre o bolo com ela, com a ajuda de uma espátula. Leve aofrigorífico durante a noite.
No dia seguinte, prepare a cobertura: bata emchantilly as natas com o mascarpone e o açúcar. Cubra  todo o o bolo com este creme. Polvilhe  com o coco ralado e leve ao frigoríficoaté servir.

Nota importante: até este fim-de-semana, nunca tinha feito nenhum bolo assim, em que a massa tem de ser mexida em banho-maria até triplicar de volume (um método cansativo e demorado!), mas correu muito bem, como podem ver nas fotos. Ao contrário da segunda vez que o fiz. Ainda agora não consigo perceber o porquê  da massa não ter crescido e ter ficado com uma textura muito compacta, sendo difícil absorver a calda. Para a próxima, vou seguir uma receita básica de pão-de-ló e usar o mesmo recheio e cobertura, pois é o que faz a diferença neste bolo. E que grande diferença!

Coconut cakewith white chocolate and raspberries filling

Bake and fill the cake the day before.


For the cake:
5 eggs
155 g sugar
125 g plain flour
30 g almond flour(or grinded almond)

For thesugar syrup:
150 ml ofwater
90 g sugar

For the coconut,white chocolate and raspberry filling:
250 g whitechocolate
4 g gelatin(3 sheets)
125 g milk
250 ml doublecream
80-100 g shreddedcoconut
400g freshraspberries (approx.)

For the frosting:
200 ml whippingcream
100 gmascarpone*
30 g sugar*
Shreddedcoconut

*I used 200g mascarpone and 60 g sugar and it was very good.

Sift theflours and set aside.
Break theeggs into a metal or glass bowl, add the sugar and take to the stove in adouble boiler, whisking constantly until it gets the triple of the volume.Remove and continue whisking until well cooled.
Meanwhilepreheat the oven to 180º.
Fold theflour gently with a spatula in the eggs mixture. Pour to a 20 cm round mould, greasedand floured (I used two moulds: poured 1/3 of the batter to one and 2/3 toanother, and baked at the same time, so I just had to cut one of the cakes inhalf).
Bake about25/30 minutes. Remove from oven and turn out onto parchment paper.
For the syrup,bring the water and sugar to the boil and once the sugar is dissolved andbegins to boil, count two minutes. Reserve.
For themousse filling, place the gelatine sheets in cold water. Bring milk to the boiland when boiling, add the drained gelatine sheets, stir and dissolve well. Pourover the white chocolate broken into pieces. Stir until it gets smooth.Reserve.
Whip thecream and add to the white chocolate mixture.
Finally addthe shredded coconut. Refrigerate for a while in order to get a mousse consistency.Meanwhile, wash and dry the raspberries.
When the cake is completely cold, cut inthree layers (or cut the taller cake in two if you had baked two cakes). Place onecake layer on serving plate, prick all over with wooden pick orskewer, then brush or pour syrup, little by little, letting syrup be absorbedbefore adding more. Spread half of the coconut and white chocolatemousse. Scatter half the raspberries over the mousse, pressing them a little.Cover with another layer of cake and drizzle it with sugar syrup. Fill with theremaining mousse and scatter the remaining raspberries. Place the last cake layeron top and drizzle with the remaining syrup. If a little mousse go out, spreadit over the cake side, with an offset spatula. Refrigerate overnight.
The nextday, prepare the frosting: beat with the electric mixer the cream with themascarpone and sugar. Frost the entire cake with this mixture. Sprinkle with shreddedcoconut and refrigerate until serving.

Important note: till that weekend I’d nevermade a cake batter like this, whisked in a double boiler till it gets thetriple of the volume (a tiring and time consuming method!) but it it wasperfect, as you can see in the pictures. Unhappily, the next time I’ve tryed tobake one, it went wrong, but even now I can’t say why: the batter didn’t risein the oven and it was kind of a compact one, not absorbing the syrup. Nexttime I’ll follow a basic sponge cake recipe and I’ll use the same filling andfrosting, which is what makes the difference in this cake. And what big differenceit is!
