A primeira vez que cozinhei ruibarbo. // My first experience with rhubarb.

 



























































































 

Se a vida te der ruibarbo faz... compota de ruibarbo.
Não! Faz tarte de ruibarbo. Ou melhor, crumble de ruibarbo. Não, não, não! Faz antes bolo de ruibarbo.

Confesso que foi assim que fiquei, indecisa, quando recebi este lindo molho de caules de ruibarbo, cortesia da querida Naida, do Frango do Campo, que o cultiva no seu jardim.

Era a primeira vez que ia cozinhar com ruibarbo e apetecia-me fazer tudo.
A escolha acabou por recair numa receita de rhubarb crumb bars, do site da Martha Stewart, que adaptei ligeiramente, e numa compota de ruibarbo e morango que publicarei noutro post.

Gostei muito deste bolo. Adoro bolos com diferentes texturas e este faz quase o pleno: massa húmida e doce, frutos sumarentos e ácidos, cobertura crocante.

A acidez é a principal característica do ruibarbo, por isso é tão usado em sobremesas, garantindo esse alto contraste entre o ácido e o doce, que eu adoro.

Se um dia a vida vos der ruibarbo, não importa que tipo de receita vão seguir: larguem tudo e enfiem-se na cozinha...

If life gives you rhubarb... make rhubarb jam.
No! Make rhubarb pie. Or rather, rhubarb crumble . No, no, no! Make rhubarb cake.

I confess I was feeling something like that, absolutely undecided, when I've received this lovely amount of rhubarb stalks. Courtesy of dear Naida, from Frango do Campo, who grows rhubarb in her garden.

It was the first time I was going to cook with rhubarb and I felt like doing everything. 
The choice turned out to lie in a rhubarb crumb bars recipe, from Martha Stewart's site, that I've adapted slightly, and rhubarb and strawberry jam, which I'll show you in another post.

I really enjoyed this cake. I love cakes with a lot of different textures and this one has almost everything: moist and sweet batter, juicy and acidic fruits, crunchy topping.

Acidity is the main feature of rhubarb, and this explains why is so used in desserts: because it ensures a delightful contrast between acid and sweet.

So, if one day life gives you rhubarb, no matter what kind of recipe you'll follow: just let go of everything and slip away to the kitchen...




























Bolo-crumble de ruibarbo
(adaptado daqui)

200 g de ruibarbo
70 g de frutos vermelhos congelados
100 g de manteiga
1 chávena* de farinha sem fermento
1/2 colher de chá de fermento para bolos
1 pitada de sal
1 chávena* de açúcar amarelo
1 colher de açúcar mascavado claro
2 ovos L
1 pitada de sal

Para crumble da cobertura:
70 g de manteiga
1 chávena* de farinha sem fermento (3/4 + 1/4)
1/2 chávena* de açúcar mascavado claro

*chávena de 250 ml de capacidade

Coloque os frutos vermelhos a descongelar.
Unte e polvilhe com farinha uma forma quadrada relativamente pequena (idealmente 18x18 ou 20x20), forre com papel vegetal e unte/polvilhe novamente.
Ligue o forno nos 180º.
Prepare a cobertura: misture a manteiga e o açúcar, junte a farinha e amasse com os dedos até obter uma textura de migalhas grossas. Reserve no frigorífico.
Lave e corte os caules de ruibarbo em cubos.
Numa taça, junte o ruibarbo e os frutos vermelhos, já praticamente descongelados. Junte 1/4 de farinha e a colher de sopa de açúcar mascavado e envolva.
Noutra taça, bata bem, com um batedor de varas ou batedeira eléctrica, a manteiga e o açúcar amarelo. Junte os ovos, um a um. Noutra taça misture a restante farinha, o sal e o fermento e junte estes secos, aos poucos, à mistura anterior.
Verta para a forma, espalhe por cima a fruta e termine com a massa de crumble que tinha reservado no frigorífico.
Leve ao forno cerca de 55 minutos ou até estar bem dourado e a fruta macia (se fizer o teste do palito, este não precisa de sair completamente limpo, pode trazer agarradas algumas migalhas de bolo...).

Rhubarb crumb cake
(adapted from here)

200 g of rhubarb
70 g of frozen red fruit
100 g butter
1 cup plain flour
1/2 teaspoon baking powder
1 pinch of salt
1 cup of light brown sugar + 1 tablespoon
2 large eggs 
1 pinch of salt

For the crumble topping:
70 g butter
1 cup plain flour (3/ 4 + 1/4)
1/2 cup light brown sugar

Thaw the red fruit.
Grease and dust with flour a square mold ( ideally 18x18 or 20x20 ), line with parchment paper and grease/ dust again.
Preheat the oven to 350 ºF .
Prepare the topping: mix the butter and sugar, add the flour and knead with your fingers until you get a coarse crumb texture. Refrigerate.
Wash and cut the rhubarb stalks into cubes.
In a bowl, combine the rhubarb and red fruit. Add 1 /4 tablespoon flour and 1 tablespoon brown sugar and coat the fruit and the rhubarb with this mixture.
In another bowl, whisk (or use an electric mixer) butter and brown sugar. Add the eggs, one by one.
In another bowl, mix the remaining flour, salt and baking powder and add slowly these dry ingredientes to the butter/eggs mixture.
Pour into the mold, spread over the fruit and the rhubarb and top with the crumble dough you've refrigerated.
Bake about 55 minutes or until golden and the fruit is soft (if you do the toothpick test, this doesn't need to go out completely clean, it can bring some moist cake crumbs attached... ).
