Let's celebrate come on...




























Esta é a receita e a ideia de decoração que nos pode salvar sempre que quisermos fazer um bolo para uma data especial, mas estamos sem tempo ou grande paciência para pasta de açúcar ou bicos pasteleiros.
E é tão versátil, que tanto pode ser usada em aniversários de crianças, como em festas de crescidos, se o deixarmos mais simples ou o decorarmos de forma mais sóbria.

Outra vantagem: funciona com qualquer bolo - desde que o sabor combine com chocolate, claro, mas para mim praticamente todos os sabores vão bem com chocolate.

Neste caso, usei a minha receita 'todo-o-terreno' de bolo de chocolate, adaptado de uma receita básica de bolo chiffon, que em poucos minutos estamos a levar ao forno.

Podem ver aqui uma decoração semelhante, mas com chocolates Kit Kat - um pouco mais trabalhosa, pois é preciso separar as barritas de chocolate, que muitas vezes se partem (ou chegamos a casa com elas já partidas!).

A partir desta ideia tão simples (cujo autor é impossível descobrir no meio de tantas imagens de bolos parecidos espalhados pela net), podemos dar largas à imaginação: há destas bolachinhas em versão chocolate branco; há nozes, fruta fresca ou suspiros que podemos colocar por cima, há fitas e laços para todos os gostos. 

O importante é fazê-lo e decorá-lo com amor e... celebrar!

This is the recipe and decorating idea that can save you whenever you want to make a cake for a special occasion, but there's lack of time or you aren't in the mood for sugar paste or pastry tips.
And it's so versatile, that can both be used in children's birthdays and in grown ups parties, if you decorate it in a simpler way.

Another advantage: works with any cake - as long as the taste goes with chocolate, of course, but for me almost all the flavors go well with chocolate.

In this case, I used my  'all-proof' recipe of chocolate cake, adapted from a basic recipe of chiffon cake, which only take me some minutes to put it in the oven.

You can see a similar decoration here, but made with Kit Kat chocolates - more tricky, because you need to separate the chocolate bars, which often break apart (or get home with them already broken!).

Out of this simple idea (whom author I can't find in the middle of so many cakes alike spreaded over the internet), we can use our imagination: there's a white chocolate version of these biscuits, there are nuts, fresh fruit or meringues that we can put on top, there are ribbons and bows to suit all tastes.

The important thing is to bake and decorate it with love and ... celebrate!




























Bolo de chocolate decorado com Fingers e Smarties 

Para o bolo:
2 ovos
1 chávena de açúcar amarelo
1/2 chávena de óleo vegetal
1/2 chávena de água a ferver
65 g de chocolate em pó (ou 1/2 pacote)
1 chávena de farinha sem fermento
1 colher de chá de fermento em pó

Chávena-medidora de 250 ml de capacidade

Para a ganache do recheio e cobertura:
200 ml de natas (eu gosto de usar as Parmalat de culinária)
200 g de chocolate de culinária

Para a decoração:
2 embalagens de biscoitos Fingers (usei 1 de chocolate de leite e 1 de chocolate preto)
2 embalagens de Smarties normais, mais alguns 'minis'
Fita de cetim a condizer


Comece por fazer a ganache: parta o chocolate aos pedacinhos para uma taça de vidro ou metálica.
Leve as natas ao lume num tachinho e quando começarem a ferver, retire a nata que se formou à superfície com uma escumadeira, e verta sobre o chocolate. Espere alguns minutos e mexa bem até obter um creme liso e brilhante. Reserve.

Pré-aqueça o forno nos 180º.
Unte bem com manteiga e polvilhe com farinha duas formas de 16 cm de diâmetro, forre o fundo com papel vegetal e volte a untar/polvilhar.
Coloque a água a ferver.
Com um batedor de varas, bate os ovos com o açúcar.
Junte o óleo, de seguida a água, e mexer bem.
Junte o chocolate, dissolva bem.
Envolva a farinha e o fermento.
Divida pelas duas formas e leve a cozer cerca de 25 minutos ou até um palito sair limpo do interior dos bolos.
Desenforme sobre papel vegetal e deixe arrefecer completamente.

Quando os bolos estiverem frios e a ganache já tiver adquirido alguma consistência, coloque um dos bolos no prato de servir. Com uma espátula, barre o topo com ganache e coloque o outro bolo por cima. Cubra todo o bolo com a ganache e cole os biscoitos a toda a volta do bolo, intercalando os sabores, caso use biscoitos de dois chocolates diferentes.
Termine com os smarties no topo e um laçarote a condizer.

Chocolate cake decorated with Fingers and Smarties

For the cake:
2 eggs
1 cup of brown sugar
1/2 cup of vegetable oil
1/2 cup of boiling water
65g chocolate powder (or 1/2 package)
1 cup plain flour
1 teaspoon baking powder


For the ganache - filling and frosting:
200 ml cream (I like to use 'Parmalat for cooking')
200 g cooking chocolate

For the decoration:
2 packs of Fingers biscuits (I used 1 milk chocolate and one dark chocolate)
2 packs of Smarties normal, some more 'minis'
Satin ribbon to match

Start by making the ganache: break the chocolate into small pieces into a glass or metallic bowl.
Bring the cream to the boil. Remove the skin that has formed on the surface with a slotted spoon, and pour over the chocolate. Wait a few minutes and stir well until mixture is smooth and shiny. Reserve.

Preheat the oven to 180 º.
Grease well with butter and dust with flour two molds of 16 cm in diameter, line the bottom with parchment paper and grease again/ dust with flour.
Put the water to boil.
Wisk the eggs with the sugar.
Add the oil, then the water and stir well.
Add the chocolate, dissolve well.
Involve the flour and the baking powder.
Divide by the two prepared molds and bake about 25 minutes or until a toothpick comes out clean from the inside of the cakes.
Turn out onto parchment paper and let cool completely.

When the cakes are cold and the ganache got some consistency, place one cake on serving plate. With a spatula, spread some ganache and place the other cake on top. Cover the entire cake with the ganache and 'glue' the biscuits to the cake, all the way around, alternating flavors, if you use two different chocolates biscuits. Finish with smarties on top and a matching bow tie.

A lista interminável. // The endless list.



À semelhança de todos os que adoram cozinhar, experimentar novas receitas e são viciados em livros e revistas de cozinha, eu tenho uma lista enorme de coisas para fazer pela primeira vez.
Fiquei por isso muito feliz quando um destes domingos consegui riscar os grissinos da lista.
Não saíram lá muito regulares - uns mais compridos do que outros, uns mais finos no meio do que nas pontas... 
A cozedura não foi, por isso, totalmente uniforme mas, de uma maneira geral, estavam estaladiços e foram bastante elogiados por quem os provou.
Agora, é só apurar a técnica. E continuar a dar luta à lista: foccacia, profiteroles, angel cake, cozido à portuguesa (sei que é embaraçoso, mas nunca fiz), massada de peixe, bagels, croissants, petit fours, beef bourguignon, paella, and so on, and so on...

Like all those who love to cook, try new recipes and are addicted to cook books and magazines, I have a huge list of things to make for the first time.
So, I became very happy one of these last Sundays, when I could scratch the italian breadsticks (grissini) from the list.
I found it difficult to make them equal in shape and size - some became longer than others, some thinner in the middle than at the edges - so baking was not completely uniform but, in general, they have been approved and praised for whom tasted them.
Now, It's just a question of practice. And a question of keeping fight the list: foccacia, profiteroles, angel cake, Portuguese meat and vegetables stew (I know it's embarrassing, but never made it), fish with pasta (traditional recipe from the Portuguese south), bagels, croissants, petit fours, beef bourguignon, and so on, and so on ...

Grissinos
(Caroline Bretherton - revista Love Baking - Bread, Spring 2013)

2,5 colheres de chá de fermento de padeiro seco
425 g de farinha T65, mais alguma para polvilhar
1 colher de sopa de açúcar fino
2 colheres de chá de sal
2 colheres de sopa de azeite
45 g de sementes de sésamo (também usei sementes de chia)
Água morna

Colocar  4 colheres de sopa de água morna numa tacinha e juntar o fermento. Deixar repousar por 5 minutos, mexendo apenas uma vez.
Numa taça grande colocar a farinha, o açúcar e o sal. Juntar a mistura do fermento, 250 ml de água morna e o azeite no centro dos secos, e 'empurrar' a farinha para os líquidos, a toda a volta da taça, até se obter uma massa macia, ligeiramente pegajosa.
Amassar a massa numa superfície enfarinhada durante cerca de 6 minutos, até ficar macia e elástica.
Cobrir com um pano de cozinha e deixar repousar por 5 minutos.
Polvilhar as mãos com farinha e dar uma forma rectangular à massa. Esticar até se ficar com um rectângulo com cerca de 40x15 cm. Cobrir com um pano de cozinha e deixar num local morno entre 1h a 1,5 horas, até ficar com o dobro do volume.
Pré-aquecer o forno nos 220º.
Polvilhar dois ou três tabuleiros com farinha. Pincelar a massa com água e salpicar com as sementes.
Com uma faca afiada de gume liso, corte tiras com cerca de 1 cm de largura e vá colocando-as nos tabuleiros. Levar a cozer entre 15 a 18 minutos ou até ficarem estaladiços e dourados.
Retirar e colocar a arrefecer sobre uma grade.
Servir de seguida ou guardar numa caixa hermética até 2 dias.

Grissini
(Caroline Bretherton -  Love Baking - Bread magazine, Spring 2013)

2.5 tsp dried yeast

425g strong white bread flour, plus a bit extra for dusting

1 tbsp caster sugar

2 tsp salt

2 tbsp virgin olive oil

45 g sesame seeds (I used chia seeds too)

Warm water


In a small bowl, put the yeast and 4 tablespoons of warm water. Leave for 5 minutes stirring once. In a mixing bowl, gently mix the flour, sugar and salt – make a well in the middle, then add the dissolved yeast, 250 ml of warm water and the olive oil. Mix to form a soft slightly sticky dough. Lightly flour a board or surface, then knead for about 6 minutes until smooth.  Form into a ball and cover with a damp tea towel, leave for 5 minutes. Flour your hands and press the dough into a rectangle. Roll the dough out to measure a 40x15 cm rectangle shape. Cover it with a damp tea towel and leave in a warm place for 1-1.5 hours, until doubled in size. Pre-heat the oven to 220º. Dust 2 or 3 baking sheets with flour. Brush the dough with water and sprinkle with the seeds. With a sharp knife, cut the dough into strips about 1 cm wide and put them in the baking sheets. Bake for 15-18 minutes until golden and crisp. Transfer to a wire rack to cool. Serve or keep in an airtight container for 2 days.

A rainha das tartes // The queen of pies.




Pode ser rústica, imperfeita, irregular.
Mas, para mim, a galette é o tipo de tarte mais bonito que há.
Talvez por isso mesmo: pelo seu ar tosco e romântico, que não esconde o facto de ter sido feita em casa, à mão, com fruta da época.

Há muito tempo atrás publiquei uma receita muito parecida, que podem ver aqui.
A fruta é a mesma (felizmente, as ameixoeiras dos meus pais continuam a carregar-se de frutos vermelhos luzidios, Verão após Verão), mas a massa desta é diferente.
Arrisquei uma versão mais simples desta e resultou muito bem. Tão bem, que estou ansiosa por usá-la noutras receitas, incluindo salgadas.

A massa da galette do primeiro post é excelente, mas a sua confecção é mais demorada.
Tempos de espera incompatíveis com dois rapazes de férias em casa, cuja vontade de ajudar é inversamente proporcional à sua paciência.

Seja no formato familiar ou em versão mini, as galettes são uma boa forma de usar a fruta que por estes dias amadurece quase sem darmos conta. E agora que o calor decidiu dar algumas tréguas, já se pode ligar o forno outra vez (ainda que por cá, nem o pico do calor me consiga afastar do forno - sou viciada!).

It can be rough, imperfect, irregular.
But for me, the galette is the most beautiful kind of pie.
Perhaps for that reason: for his rustic and romantic look, which doesn't hide the fact that it was handmade ??at home, with seasonal fruit.

A long time ago I published a very similar recipe, which you can see here.
The fruit is the same (fortunately, my parents' plum tree continues to load up gleaming red fruit, summer after summer), but this one uses a different dough.
I tried a simpler version of this one and it worked very well. So well, I want to use it soon in other recipes, including savory ones.

The dough in the first post is excellent, but its preparation is more time consuming.
Waiting times that are incompatible with two guys at home on school holidays, whose willingness to help is inversely proportional to their patience.

In a familiar size or in a mini-version, the galettes are a good way to use fruit that ripens fast these days. And now that the heat has decided to give us a break, you can turn on the oven again!








































Petit galettes de framboesa e ameixa
(para 8/10 tartes pequenas)

Massa:
250 g de farinha sem fermento
125 g de manteiga fria
2 ovos (os meus era caseiros e pequenos)


Recheio:
75 g de miolo de de amêndoa 
4 colheres de sopa de açúcar amarelo
75 g de framboesas
20 ameixas aprox.
Sumo de limão qb
Leite qb

Numa taça coloque a farinha, a manteiga fria cortada em cubos e os ovos.
Amasse com as pontas dos dedos até obter uma massa uniforme e macia. Reserve, embrulhada em película aderente.
Numa frigideira anti-aderente, toste ligeiramente as amêndoas, para libertarem sabor e ficarem mais crocantes. Deixe arrefecer e rale grosseiramente.
Lave e arranje a fruta, cortando as ameixas às fatias ou aos pedaços. Regue com um fio de limão.
Misture a amêndoa com 2 colheres de sopa de açúcar e junte o restante açúcar à fruta.
Ligue o forno nos 200º.
Estique a massa com o rolo - 2 mm de espessura aprox. - e divide-a no número de círculos desejado (pode usar uma faca ou um cortador grande de bolachas). Passe os círculos para um tabuleiro forrado com papel vegetal.
Espalhe na base do círculo um pouco da mistura de amêndoa e açúcar, e a seguir disponha um pouco de fruta, deixando alguma margem livre à volta. Crie os rebordos da tarte, fazendo uma dobra de massa a toda a volta, tapando um pouco da fruta. Pincele a massa com leite e salpique toda a tarte com mais um pouco da mistura de açúcar e amêndoa.
Repita a operação nos outros círculos de massa e leve ao forno cerca de 1h 15 m, ou até estarem bem douradas e a fruta borbulhante. Idealmente, servir morno com um pouco de gelado ou natas batidas.

Nota: a massa não leva açúcar, por isso se não apreciar o contraste da massa sem açúcar com a fruta, pode juntar uma colher de sopa de açúcar à massa, no momento da preparação. O açúcar da fruta deverá ter em conta a acidez da mesma.

Little raspberry and plum galettes
(for 8/10 small pies)

Dough:
250 plain flour
125 g cold butter
2 eggs (mine was small from 'home' chickens)

Filling:
75 g almond 
4 tablespoons brown sugar
75 g raspberries
20 plums approx.
Lemon juice drops
Milk qb

In a bowl, place the flour, cold butter cut into cubes and eggs.
Knead with your fingertips until the dough is uniform and smooth. Wrap in cling film and reserve.
In a non-stick pan, lightly toast the almonds, to release their flavor and make them crunchy. Let cool and coarsely grate.
Wash and arrange the fruit, cutting the plums to slices or pieces. Drizzle with some drops of lemon.
Mix the almonds with 2 tablespoons sugar and add the remaining sugar to the fruit.
Preheat the oven to 200 º.
Stretch the dough with the rolling pin - 2 or 3 mm thick - and divide it into the desired number of circles (can use a knife or large round cookie cutter). Transfer the circles to a tray lined with greaseproof paper.
In the base of the circle spread a bit of almond and sugar mixture, then put some fruit, leaving a free border around. Create the edges of the pie, making a fold around the circle, covering some of the fruit. Brush dough with milk and sprinkle with the mixture of sugar and almond all over the pie.
Repeat in the other circles of dough and bake about 1 hour and 15 m, or until they are golden brown and the fruit is bubbling. Ideally, serve warm with some ice cream or whipped cream.

Note: the dough does not take sugar, so if you do not appreciate the contrast of the dough without sugar with the fruit, you can add a tablespoon of sugar to the dough at the time of preparation. The sugar we add to the fruit should take into account its acidity.

Bater o calor. // Beat the heat.








































Este post vai ter pouca linhas, porque este calor bloqueia não só quem escreve, mas também quem lê.
Serve só para sugerir um batido que pode funcionar como uma brisa refrescante nestes dias de canícula.

A anona não é um fruto muito comum nas nossas cozinhas, até porque tem de ser importado*, mas está referenciado como um dos melhores aliados na alimentação preventiva da doença cancerígena e durante o seu tratamento.

Criei este batido quando andava a pesquisar e a testar receitas para este workshop, e foi uma agradável e fresca surpresa!

*Fãs atentas do LB no facebook comentaram que há anonas nos Açores e na Madeira! As que eu tenho comprado são importadas, pelo menos foi o que me disseram na frutaria. Nem sempre há e são caras. É uma pena que a 'nossa' anona não esteja mais divulgada. Se fizermos uma pesquisa rápida na net, as primeiras referências vão para as anonas do Brasil e de outras zonas de climas tropicais.

This post will have just a few lines, because the high temperatures block not only the writer, but also those who read. Serves only to suggest a smoothie that can function as a refreshing breeze in these heat wave days.

The soursop is a rare fruit in our portuguese kitchens, it has to be imported*, but is listed as one of the best allies in a cancer preventive diet and during its treatment.

I created this milkshake when I was researching and testing the recipes for this workshop, and it was a pleasant and fresh surprise!

* Fans of  LB on facebook commented that there are soursops in Azores and Madeira! The ones I've bought were imported, at least that's what they said to me in the shop. They aren't easy to find and a bit expensive. It's a pitty that 'our' soursop isn't well-known. If we do a quick search on the net, the first references go for soursops from Brazil and other tropical areas.








































Batido fresco de anona
Para 2 copos médios

150 g deanona descascada e limpa de pevides
150 ml debebida de soja
Fio de limãopara a anona não oxidar
Açúcaramarelo a gosto
Canela em pó qb
Cubos de gelo - cerca de 12

Juntar todosos ingredientes, incluindo o gelo, num processador de alimentos e triturar atéficar um líquido espesso, uniforme e macio.
Servir de imediato com umapalhinha.

Soursop smoothie
About 2 medium glasses

150g peeled and seeded soursop
150 ml soymilk
A few lemon juice drops
Brown sugar to taste
Cinnamon to taste
Ice cubes - about 12

Add all ingredients, including ice, in a food processor and blend until you get a uniform and soft mixture. Serve immediately with a straw.

No país dos gelados, parte II. // In ice cream land, part II.

 

























































A primeira paragem desta minha curta viagem a Itália foi Bérgamo, a pequena cidade do norte onde nasceu a polenta, e que fica apenas a 50 km de Milão.
É a cidade mais próxima da sede da empresa onde o G. trabalha e por isso muito dos seus colegas italianos são daqui. Alguns já se tornaram amigos e foi um verdadeiro luxo sermos guiados pela cidade por verdadeiros bergamascos, que a conhecem tão bem.

Passeámos pelas duas grandes zonas de Bérgamo: a 'cidade alta', com os seus monumentos medievais, praças e ruelas pitorescas, e a 'cidade baixa', mais cosmopolita, onde se situava o nosso simpático B&B.
Gostei da cidade: tranquila, limpa, onde é fácil encontrar gente atenciosa e boa comida (estamos em Itália, certo?).

De facto, foi aqui que fizemos as duas melhores refeições deste fim-de-semana comprido.
A primeira foi um jantar no restaurante Casanova, especializado em peixe e que apresenta imensos pratos com este ingrediente em cru (e não é que gostei? Digamos que achei o cru de inspiração mediterrânica bem diferente do cru oriental...).
Carpaccio de atum com burratina e molho pesto, gambas (cruas) da Sicília com ravioli de porcini e bacalhau da islândia cozido a baixa temperatura, foram algumas das coisas boas que vieram para a mesa, num jantar acompanhado por diversos tipos de espumante de uma cave italiana, que nessa noite dava a conhecer os seus produtos.
Foi um jantar tão delicioso quanto divertido, com dois casais amigos italianos, que no final me apresentaram ao talentoso chef Daniele Casanova (grazie Marco, Valentina, Ivan e Marina).

Para o dia seguinte, estava marcada a outra grande aventura gastronómica desta viagem: um almoço no Da Vittorio, considerado um dos melhores restaurantes de Itália e detentor de três estrelas Michelin (calma, não somos loucos nem milionários: o menu de degustação estava em promoção!).
Serviço impecável, pratos que pareciam obras de arte, muitas texturas e sabores para descobrir, com destaque para a esferificação de ginseng com pó de ouro, incluída na sobremesa.
Foi uma experiência memorável, a vários níveis, mas confesso que gostar, gostar, gosto de comida descomplicada, num ambiente menos clássico e mais descontraído.

Agora fica apenas a faltar uma 'mini-foto-reportagem' sobre a nossa passagem por Pádua, à ida e à vinda de Veneza.

E enquanto faço os posts sobre esta escapadinha, mais vontade ganho de voltar a Itália sem demora. Quero voltar a sentir no ar aquela língua cantada deliciosa, quero provar tudo aquilo que desta vez não consegui, quero consolar a vista com as paisagens do meu imaginário (o Lago Como desde que vi o "Amor à beira do Lago"; o litoral; a Toscânia rural; o sul), quero em Roma ser romana.

Italia, aspettami...

The first stop of these short trip to Italy was Bergamo, a small town on the north (the 'birthplace' of polenta), 50 km away from Milan.
It is the closest town to the headquarters of the company where G. works, so many of his Italian fellows  live here. Some have become friends and it was a real luxury to be guided around the city by real bergamascos who know it so well.

We walked through the two major areas of Bergamo: the upper town, with its medieval monuments, picturesque squares and old alleys, and the 'lower city', more cosmopolitan, and where was our friendly B & B.
I liked the city: quiet, clean, where is easy to find nice people and good food (we are in Italy, right?).

In fact, it was here that we had the two best meals of this long weekend.
The first was a dinner at Casanova restaurant, specialized in fish and presenting a lot of raw fish dishes (which, surprisingly, I loved. Let's say that the Mediterranean-inspired raw is very different from the oriental raw ...).
Tuna Carpaccio with burratina and pesto, (raw) Sicilian prawns with porcini ravioli, and Iceland cod cooked at low temperature, were some of the good things that came to the table for a great dinner that was accompanied by various types of sparkling wine from an Italian cellar, which was making a degustation of their products that night.
We had a lot of fun in this delicious dinner, in the company of two Italian couples, who at the end made me meet the talented chef Daniele Casanova (grazie Marco, Valentina, Ivan and Marina).

For the next day was scheduled another great culinary adventure: lunch at Da Vittorio, considered one of the best restaurants in Italy and home of three Michelin stars (keep calm, we are not crazy or millionaires: the degustation menu was on sale!).
Faultless service, dishes that looked like art, many textures and flavors to discover, especially the ginseng spherification with real gold powder, included in the dessert.
It was a memorable experience at various levels, but I confess that I prefer uncomplicated good food, in a less classical and more relaxed atmosphere.

Now is just missing a 'mini-photo-report' on our passage through Padua, when we was going to (and coming from) Venice.

And while I write the posts on this escapade, my desire to go back to Italy soon gets stronger.
I want to feel in the air that delicious language again, I want to taste everything this time I couldn't, I want to fulfil my view with the landscapes I have in my head since I was young (Lake Como, since I saw 'A month by the lake'; the coast; the rural Tuscany; the south), I want to be Roman in Rome.

Italia, aspettami...
