Há dias para tudo // There's a day for everything.







































Se há dias para tudo, porque não haver um dia especialmente dedicado aos bolos e doces de forno?
O World Baking Day foi celebrado no domingo passado, e este bolo de laranja e chocolate, feito para cantar os parabéns a uma pessoa da família, serviu também para assinalar a data.
Uma data que pretende valorizar o fabrico caseiro e fomentar o regresso à cozinha, enquanto espaço de experiências gratificantes e momentos de partilha.

Bom, para dizer a verdade, aqui em casa quase todos os dias são dias de ligar o forno.
Aliás, não sei o que seria de mim sem um. Há uns meses, o meu forno avariou e a sensação foi de pânico e vazio total. A sorte é que foi um problema rápido de resolver, tratou-se apenas de um botão partido. É que ainda por cima, adoro o meu forno: não sendo de luxo ou profissional, nunca me deixa ficar mal. E para mim, cozinha de conforto é sinónimo de pratos de forno.

Este ano, o movimento World Baking Day apelava a sermos corajosos, a experimentar uma receita diferente e a elevar a fasquia do desafio de fazer um bolo, um pão ou uns muffins...

Não podemos dizer que tenha seguido o briefing à risca, mas este bolo teve para mim uma novidade: foi o primeiro que fiz com azeite. E ficou delicioso, como normalmente acontece com as receitas do Flagrante Delícia. Que o diga a Maria João, do Clavel's Cook, que já o fez mais do que uma vez e me inspirou a experimentá-lo.

If there are days for everything, why not having a day specially dedicated to cakes and baked desserts?
The World Baking Day was celebrated last Sunday, and with this orange and chocolate cake, made ??to sing happy birthday to a family member, I also wanted to mark the date.
A date created to cherish the homemade food and encourage the return to the kitchen, while space of sharing and rewarding experiences.

Well, to tell the truth, here at home almost every day is day of turning on the oven.
Actually, I don't know what would I do without one. A few months ago, my oven broke down and the feeling was of panic and total emptiness. Luckily, the problem was easy to fix, it was just a broken button. Even because I love my oven: it is not a luxury or a professional one, but never lets me down. And for me, comfort food is synonymous of oven dishes.

This year, the World Baking Day movement called to be brave, to try a different recipe and stretch the limits on baking a cake, bread or muffins...

We can not say that I'd followed the briefing to the letter, but this cake was a novelty for me: it was the first one I baked with olive oil. And it turned out delicious, as usually happens with  Flagrante Delícia recipes. Ask Maria João, from Clavel's Cook, who has baked it more than once, and inspired me to give it a try.

Bolo de azeite e laranja com chocolate
(receita original aqui / uma das versões do Clavel's Cook, aqui)

125 g de iogurte natural
120 g de azeite virgem extra
200 g de açúcar
(150 g para a massa e 50 g para as claras)
2 ovos
Sumo e raspa de uma laranja
180 g de farinha sem fermento
6 g de fermento em pó
100 g de chocolate de culinária
Calda de laranja (opcional)
Ganache de chocolate para rechear e cobrir
Sprinkles dourados para decorar (usei da Vahiné)
Pré-aquecer o forno a 180º C.
Untar bem duas formas com cerca de 20 cm de diâmetro, forrar o fundo com papel vegetal e voltar a untar e polvilhar com farinha (ou usar spray desmoldante). Numa taça, juntar o iogurte, o azeite, 150 g de açúcar, as gemas, a raspa e o sumo de laranja e bater bem. Adicionar a farinha peneirada com o fermento e bater a velocidade baixa (eu usei o batedor de varas e e não peneirei), até ligar todos os ingredientes. Bater as claras em castelo e ir adicionado o açúcar, aos poucos, até que fique com a consistência firme e brilhante de merengue. Incorporar as claras na massa, suavemente. Na versão da foto não usei chocolate na massa, mas ontem repeti a receita e segui as indicações para a versão marmoreada: separar 250 g de massa para outra taça. Derreter o chocolate em banho-maria ou no microondas (neste caso, durante poucos segundos de cada vez e mexendo bem entre cada intervalo de tempo). Misturar bem o chocolate com os 250 g de massa. Colocar as duas massas nas formas alternadamente, usando uma faca ou espátula para misturar e criar o efeito marmoreado. Levar a cozer os bolos durante cerca de 25 minutos ou até que um palito inserido no centro do bolo saia seco. Arrefecer ligeiramente dentro das formas, antes de desenformar. Desenformar, deixar arrefecer completamente, picar os bolos e regar com a calda de sumo de laranja (opcional) e rechear/cobrir com a ganache de chocolate.
Para a calda: sumo de 1 laranja + 1 colher de sopa de açúcar amarelo, levar a ferver e coar antes de usar, ainda quente.
Para a ganache: partir em pedacinhos 200 g de chocolate de culinária para uma taça de vidro ou metal; levar 200 g de natas ao lume num tachinho. Quando começar a fervilhar retirar do lume e verter sobre o chocolate, mexer um pouco, esperar uns 10 minutos e mexer bem com um batedor de varas até estar uniforme e brilhante. Deixe arrefecer bem antes de usar.

Orange and olive oil cake with chocolate

125 g of natural yoghurt

200 g sugar (150 g + 50 g)
120 g of extra virgin olive oil
2 eggs
Juice and zest of one orange
180 g plain flour
6 g baking powder
100 g dark chocolate
Orange syrup (optional)
Chocolate ganache for the filling/frosting (opcional)
Golden sprinkles to decorate (I used Vahiné)
Preheat oven to 180 º C. Grease well two molds about 20 cm in diameter, line the bottom with parchment paper, grease again and coat with flour (or use baking spray). In a bowl, add the yogurt, olive oil, 150 g sugar, egg yolks, orange zest and juice and beat well. Add the sifted flour and baking powder and beat at low speed (I used the whisk and didn't sifted the flour and the baking powder) to mix all the ingredients. Beat the egg whites and add the sugar gradually until you have a firm and glossy meringue. Gently, incorporate the egg whites into the batter. In the version you see in the pictures, I didn't used chocolate in the batter, but yesterday I repeated the recipe and followed the steps for the marbled version: separate 250 g of the batter to another bowl. Melt the chocolate in a double boiler or in the microwave (in this case, for a few seconds at a time and stirring well between each interval). Mix the chocolate with the reserved batter. Pour the two batters alternately into the molds, using a knife or spatula to mix and create the marbled effect. Let bake the cakes for about 25 minutes or until a toothpick inserted in the center of the cakes come out dry. Cool slightly before unmolding. Unmold, allow to cool completely, prick the cakes and moisten them with the orange syrup (optional). Fill / frost with the chocolate ganache.
For the syrup: 1 orange juice + 1 tablespoon brown sugar, bring to boil and strain before using, still warm.
For the ganache: cut in little pieces 200 g of dark chocolate into a glass or metal bowl; heat 200 g of cream in a pan. When it starts to simmer remove from heat and pour over the chocolate, stir a bit, wait about 10 minutes and stir well with a whisk until creamy and shiny. Allow to cool thoroughly before using.
