A minha primeira focaccia // My first focaccia.






Há muito que queria fazer focaccia.
Há uns meses largos, quando dava um programa da Lorraine Pascale na SIC Mulher, apanhei um episódio em que ela fazia uma focaccia maravilhosa num abrir e fechar de olhos.
Quer dizer, isso do abrir e fechar de olhos era só mesmo no programa, porque é verdade que a massa precisava de tempo para levedar. Mesmo assim, comparando com algumas receitas de focaccia que já me tinham passado pelas mãos, aquela parecia bem mais rápida e descomplicada.

Passado algum tempo, vi que a Guida, do blog 'panela sem (de)pressão' também se tinha encantado pela focaccia da Lorraine e, bem mais despachada do que eu, já a tinha replicado.

A semana passada, quando me ofereceram os tomates-cereja de que já falei aqui, uma das sugestões de utilização que me deixaram na página do LB no facebook foi a de fazer uma focaccia. Não podia adiar mais a estreia!

Segui as indicações da Guida, só lhe acrescentei o tomate, e o resultado foi este bonito pão, de aroma, cores e sabor bem mediterrânicos.

O alecrim usado foi cortado na hora de um vaso que tenho na varanda, e que é das poucas ervas aromáticas que se têm aguentado cá em casa este Verão...

I had 'focaccia' in my to-do list for a long time.
Some months ago, when a tv show with Lorraine Pascale was being broadcasted on SIC Mulher, I've watched an episode where she made ??a wonderful focaccia in the twinkling of an eye.
I mean, the twinkling of an eye was only in the show, because the batter needed time to rise.
Even so, comparing with some focaccia recipes I've seen, that one seemed much faster and uncomplicated.

After a while, I saw that Guida, from 'panela sem (de)pressão' had also been attracted by Lorraine's focaccia and, being much more bold than me, had already given it a try.

Last week, when these cherry tomatoes arrived to my kitchen, one of the suggestions someone gave me in facebook was to make a focaccia. I could no longer delay the debut!

I followed Guida directions - just added the tomatoes - and the result was this beautiful bread, with strong Mediterranean aroma, colors and flavors.

The rosemary I've used was picked from a vessel in my balcony, and is one of the few herbs that have 'survived' here at home this hot summer ...




Focaccia de alecrim e tomate-cereja
(ligeiramente adaptado daqui)

500 g de farinha sem fermento (desta vez usei farinha 55, mas para a próxima irei usar 65)
2 colheres de chá de sal
7 g de fermento de padeiro seco
80 ml de azeite extra virgem + algum para pincelar
200 ml de água morna
Algumas hastes de alecrim
20 tomates-cereja, aprox.
Flor de sal


Forrar um tabuleiro de ir ao forno com papelvegetal.
Numa taça grande, misturar a farinha, osal e o fermento.
Abrir um buraco ao centro, adicionar aí o azeitee a água e amassar até formar uma bola.
Passar para uma superfície enfarinhada e amassar durante cerca de 10 minutos.
Para testar se a massa está pronta (deve ficarelástica), pressionar com o dedo indicador enfarinhado: se a massa voltar aosítio, já está.
Passar a massa para o tabuleiro preparado eestendê-la dando-lhe uma forma "retangular ovalada" até que tenhacerca de 30 cm x 20 cm.
Cobrir o tabuleiro com um pano de cozinha húmidoe deixar levedar num sítio quente até que dobre de tamanho, cerca de uma hora(a Lorraine Pascale coloca o tabuleiro numa cadeira alta, junto ao forno, comeste já em pré-aquecimento ou enquanto coze outra coisa e parece-me uma boaideia).
Pré-aquecer o forno a 200º.
Com o indicadorenfarinhado, fazer cavidades na massa (para a próxima tenho de empurrar mesmoaté ao fundo - os tomates ficaram um pouco de fora), a espaços regulares.
Lavar, secar e envolver os tomates-cereja emazeite.
Espalhar os tomatinhos pelas cavidades.
Salpicar com alecrim e flor de sal.
Levar ao forno cerca de 30 minutos.
Retirar do forno e pincelar com azeite.

Rosemary and cherry tomatoes focaccia

(slightly adapted from here)


500g/1lb 2oz all-pupose flour, plus extra fordusting (next time I'll usestrong flour - T65)
2 tsp salt
1 x 7g/oz sachet fast-action dried yeast
80ml/3fl oz olive oil, plus extra for drizzling
150-250ml/5-9fl oz warm water
1 bunch fresh rosemary
Large pinch Fleur de sel


Line a large flat baking tray with parchment paper and dust with flour.
Put the flour into a large bowl, add the salt andyeast, then add the olive oil, plus enough warm water to make a soft but notsticky dough. The dough should feel quite loose and not tight and difficult toknead. If the whole amount is added it may appear that the dough is beyondrepair, but gently kneading by way of scooping up the dough, scraping anysticky bits on the surface and slapping it back down again for a few minuteswill see the dough begin to become ‘pillowy’ and more manageable.
Knead the dough for about 10 minutes by hand on alightly floured surface. The dough will feel stretchy when pulled. To test ifit is ready, with a well-floured finger, prod a shallow indent in the side (nomore than ¾cm/¼in). If the indent disappears by way of the dough springing backthen it is ready to shape. If the indent stays, knead for a few minutes longer.
Shape the dough into an oval and place it on theprepared baking tray. Flatten it out to about 30cm/12in long and 20cm/8in wide.Cover the dough with a wet kitchen towel.
Preheat the oven to 200C/400F/Gas 6. Leavethe dough in a warm place for about an hour, or until it has almost doubled insize. With a floured index finger press holes in the dough at regularintervals, about 4cm/1½in apart in rows across the dough, pressing right down tothe bottom. Wash, dry and coat the cherry tomatoes with olive oil. Distributethe tomatoes around the holes. Sprinkle with rosemary and some fleur de selover the dough and place in the the oven.
Bake for about 25–30 minutes, oruntil the bread is well risen, pale golden-brown and feels hollow when tappedunderneath. Remove from the oven and drizzle with some olive oil.
